Ingredients:
1 pound of firm white fish (such as cod, halibut, or mahi-mahi), cut into 1-inch cubes
2 tablespoons olive oil
2 tablespoons fresh lemon juice
2 teaspoons minced garlic
1 tablespoon fresh parsley, finely chopped
1 tablespoon fresh dill, finely chopped
1 teaspoon fresh thyme, finely chopped
Salt and pepper, to taste
Wooden or metal skewers

Instructions:
Prepare the Skewers:
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning while grilling.
Marinate the Fish:
In a large bowl, combine the olive oil, lemon juice, garlic, parsley, dill, thyme, salt, and pepper. Add the fish cubes to the bowl and gently toss to coat. Cover and let the fish marinate in the refrigerator for 20-30 minutes.
Assemble the Skewers:
Thread the fish cubes onto the skewers, leaving a small amount of space between each piece to ensure even cooking.
Preheat the Grill:
Heat your barbecue to medium-high. Lightly oil the grill grates to prevent sticking.

Place the skewers on the preheated grill. Cook for about 2-3 minutes on each side, turning carefully, until the fish is opaque and flakes easily with a fork. Avoid overcooking to keep the fish moist.
