Ingredients (Serves 4):
- 600 grams beef mince (preferably 80% lean, 20% fat)
- 4 burger buns
- 4 slices of cheddar cheese
- 100 grams pickles, sliced
- 1 medium onion (optional), thinly sliced or diced
- 60 grams butter (for toasting the buns)
- 4 tablespoons ketchup
- 4 tablespoons mayonnaise
- 1 tablespoon mustard (optional)
- Salt and black pepper to taste
Cooking Instructions:
Prepare the Barbecue:
Preheat the barbecue to high heat. Ensure the grates are clean and lightly oiled to prevent sticking.
Form the Mince Balls:
Divide the beef mince into 4 equal portions (around 150 grams each). Roll them into loose balls without compacting the meat too tightly. Season each ball with a generous pinch of salt and black pepper on all sides.
Prepare the Sauce:
In a small bowl, mix ketchup, mayonnaise, and mustard (if using). Adjust the ratios to your preference.
Toast the Buns:
Slice the buns in half. Spread butter lightly on the cut sides and toast them on the barbecue until golden brown. Remove from the heat and set aside.
Cook the Burgers:
Place a beef ball onto the barbecue grates. Using a sturdy spatula, press down firmly to flatten it into a patty (around 1 cm thick). Hold the spatula down for about 10-15 seconds to get a nice sear. Repeat with the remaining mince balls.
Flip and Add Cheese:
After about 2-3 minutes, once the edges are crispy and the bottom has a deep brown crust, flip the patty. Add a slice of cheddar cheese on top of each patty and cook for another 1-2 minutes until the cheese melts.
Assemble the Burgers:
Spread the sauce on both the top and bottom halves of the toasted buns. Add pickles and onions on the bottom bun. Place the beef patty with melted cheese on top. Close with the top bun.
Serve and Enjoy:
Serve the smash burgers immediately, alongside your favorite barbecue sides such as fries, coleslaw, or a fresh salad.
