Barbecued Steak Fajitas Recipe


Ingredients:

1 kg flank steak or skirt steak
2 large bell peppers (one red, one green), sliced into strips
2 medium onions, sliced into strips
3 tablespoons olive oil
Juice of 2 limes
3 cloves garlic, minced
2 teaspoons ground cumin
2 teaspoons smoked paprika
1 teaspoon chili powder
1 teaspoon salt
1/2 teaspoon black pepper
1 small bunch fresh cilantro, chopped (optional)
Ready-made flour tortillas (about 8-10, depending on size)

Optional Toppings:

Sour cream
Grated cheese
Guacamole
Salsa

Instructions:

Prepare the Marinade:


  In a small bowl, mix olive oil, lime juice, garlic, cumin, smoked paprika, chili powder, salt, and black pepper. This will be your marinade.



Marinate the Steak:


  Place the steak in a shallow dish or a resealable plastic bag. Pour the marinade over the steak, ensuring it is well-coated. Cover and refrigerate for at least 1 hour or up to 6 hours for better flavor.



Prepare the Vegetables:


  While the steak marinates, slice the bell peppers and onions into strips. Toss them with a small drizzle of olive oil and a pinch of salt and black pepper in a bowl.



Preheat the Grill:


  Heat your barbecue to medium-high heat.



Cook the Steak:



    Remove the steak from the marinade and place it directly on the preheated grill. Cook for about 4-6 minutes on each side for medium-rare, or adjust to your desired doneness. Use tongs to flip the steak without piercing it.


    Once cooked, remove the steak from the grill, place it on a cutting board, and let it rest for about 5 minutes.




Cook the Vegetables:


  While the steak rests, place the sliced peppers and onions in a grill basket or directly on the barbecue (if they’re large enough not to fall through). Cook them for about 5-7 minutes, tossing occasionally, until they are tender and lightly charred.



Slice the Steak:


  After the steak has rested, slice it against the grain into thin strips.



Assemble the Fajitas:



    Warm the tortillas on the grill for 30 seconds on each side, or until heated through.


    Fill each tortilla with a few slices of steak, grilled peppers and onions, and any optional toppings you prefer.




Serve and Enjoy:


  Serve the fajitas immediately with additional lime wedges on the side for extra flavor.
